4 Honeycrisp Apples
1/2 C brown sugar
2 tsp ground cinnamon
1/4 C dried cranberries
1/4 C chopped walnuts
4 Tbsp butter
Preheat oven to 400. Slice off top of apples and scoop out cores, leaving a well in the center. In a bowl, mix brown sugar, cinnamon, cranberries and walnuts until blended. Stuff each apple with 1/4 of the brown sugar mixture. Place apples in a deep baking dish, topping each with 1 Tbsp butter and a sprinkle of cinnamon. Fill bottom of pan with water and bake for 50-60 minutes, until apples are tender.
Hubby and I started Weight Watcher's yesterday. I think this would be really good...it's fruit, right? LOL

YUM! Sounds delicious. I'd give you the "fruit points". But you might want to cut the amount of butter in half - I T. per apple seems a bit rich to me.

It sounds wonderful! I'm on weight watchers right now. If you leave off the butter and reduce the sugar, it should be ok. Weight watchers has some great recipes on their website.
I just went to the Weight Watcher's website trying to figure out dinner. I had hamburger and couldn't figure out the best way to fix it.
I ended up browning it, adding taco flavoring making a taco salad using baked tortilla chips and fat free cheese. Definitely better than what we normally do!
I'd had the same thought as you guys about the butter and sugar. I meant to get some apples at the store and forgot.
