Pineapple Cookies

I think I might have posted this recipe last year, but decided to do it again. Pineapple cookies are my absolute favorite, and one of the few traditions I've kept from my childhood. I've been trying to hold off on making these, because as soon as I do, I'll sit down and eat the entire batch!!
Pineapple Cookies

2 Cups sifted flour
1 teaspoon Baking powder
Few grains salt
1 teaspoon baking soda
½ cup margarine
1 cup light brown sugar
1 cup crushed pineapple
1 egg
1 teaspoon vanilla

Drain pineapple well, reserving liquid for icing. Sift flour, baking powder and salt. Dissolve baking soda in pineapple. Smoosh butter, add sugar – blend well. Add egg and vanilla, mix well. Gradually add sifted ingredients – mixing after each addition. Blend in pineapple

Bake 6-8 minutes at 375


Icing:

2 Cups powdered sugar
3 Tablespoons pineapple juice

Mixed up and smeared on top of cookies. :)

These sound so yummy! Must copy and print out the recipe and try them soon. Baking another rum cake tonight as well as about 12 dozen sugar cookies for my nieces.

Oooh, these sound good. I'll definitely give them a try.
I'll be baking sugar cookies today, and maybe pecan fingers. We finished the rum cake last night - oh, woe. I'll have to make another.

I'm going to print this off and put it in the cookbook I'm putting together for my future son-in-law. Yes. He's the one who cooks and does laundry. She's the one with the power tools and can change the oil in the cars. At least they fit! :D

I absolutely love these cookies - which is why I've been holding off on making them. LOL I can't bake them, and then leave them be. I'll sit down and eat half the batch immediately, the other half an hour later.

Silver - why am I not surprised? She is your daughter! LOL
